TOMATO SAUCE CAKE

Another manly recipe. All natural ingredients. No additives. No preservatives.

Ingredients:

  • 1 cup sugar
  • 1/2 cup butter softened (melted)
  • 1 + 3/4 cup self rising flour
  • 12 ounces tomato sauce. Yup. tomato sauce.
  • 1 egg. (I always use extra large EB (Egglands Best all natural brand)
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon

Optionals: 1 cup chopped nuts; 1 cup chopped dates, or 1 cup raisins, or any combination of these you choose.

Directions:

  • -Cream sugar and butter and egg
  • -Add sifted flour, baking soda, nutmeg, cinnamon, baking powder.
  • -Add nuts, dates or raisins as desired
  • -Pour into cake pan (9.5 inch square and 2inches deep).
  • -Bake in preheated oven at 350 F for 45 minutes, or until toothpick inserted in middle comes out clean.

-Allow to cool and then frost with cream cheese icing:

  • 1 (3) ounce package of cream cheese.
  • 2 + 1/2 cups confectioners sugar.
  • 1/4 tsp vanilla extract
  • 1 tablespoon milk

-Blend all ingredients til smooth, then frost that cake and enjoy it.

Now for the cheater version for those who do not care about their health or feeding junk filled foods to their families: (Not a manly chef's recipe - but easy):

Ingredients:

  • 1 can of tomato soup - undiluted
  • 1/2 cup water.
  • 2 eggs.

-Mix all ingredients, following the directions on the package of cake mix. Add optionals as desired. Cool and frost (with pre-made store bought frosting of course).

Interesting. I wonder, is the tomoto flavor. strong or does it just blend in?

Thanks for reading. It just blends in and is not at all as over powering as one would think. Excellent with a nice white cream cheese frosting.
