FRUIT COCKTAIL CAKE.

Fruit Cocktail Cake, Quick, Easy, Delicious, All Natural.

1 + 1/2 cup sugar

2 large eggs

2 cups self rising flour

2 teaspoons baking soda

1 16oz can of fruit cocktail, with natural juices only - no other ingredient. Separate the juice and the fruit and set aside.

  • -pre-heat oven to 350F
  • -beat eggs and add sugar.
  • -sift flower and baking soda together and add alternately with juice from fruit cocktail.
  • -blend until smooth
  • -Fold in fruit last

-pour into 2 buttered and floured 9 inch cake pans. Or spray with Pam and lightly flour.

-bake at 350F for 15-20 minutes.

Let cool before frosting. Icing recipe below.

Icing:

  • 1 eight ounce package of cream cheese
  • 1/2 stick of butter- sofened
  • 1 teaspoon (real) vanilla extract
  • 2 tablespoons milk (if needed).

Mix all ingredients. Beat until creamy. If needed, add milk gradually to get to spreadable frosting consistency. Apply icing to cooled cake.

You are welcome. This is a recipe that one of the nurses contributed to a cook book we all put together about 35 years ago when i was working in Cranston, Rhode Island, so i guess it has been around for a while. Always a favorite. Thanks for reading.
